Recognising Excellence in the Galley

International Food Services (IFS) carries out regular audits on the vessels that it caters for, in order to support Captains and Chief Cooks to reinforce standards in the areas needed.

The audits are carried out by IFS Catering Superintendents, who go through processes and practices in the galley to try to identify areas of improvement, which bring robust food safety for all seafarers.?

On occasions, however, IFS auditors meet some outstanding examples of excellence, which deserve to be highlighted as an example of work and professionalism.?

Recently, an IFS Auditor, awarded Chief Cook Muhammud Anas, from Indonesia, with a score of 96% in the audit of his work in the galley.

“I just follow the IFS schedules for cleaning and checking expiry dates on food. I also make sure I’m using different chopping boards and washing food properly,” said Chief Cook Anas.?

The company of this Chief Cook, Anthony Veder has publicly recognised this achievement by one of its own cooks, and congratulated him on LinkedIn.?

Scores above 95% do not come very often and IFS is keen to recognise those Chief Cooks who have taken our training rigorously and kept standards high, by awarding a certificate of excellence to all Chief Cooks who pass the audits with flying colors.?

This cook says the training he received from IFS was instrumental. IFS-trained cooks, who have signed up to our Cooks Club can receive regular updates and training material via the IFS Coach app that will support their development and further advance their skills.?
