Recipe Idea: Fish Friday with a Twist
So here's a little cracker for you that all those fish lovers out there will adore - it's a great alternative to fish and chips for Fish Friday!!!!
Ingredients
- Cod Loin - cut into chunky pieces
- 1 Tin of Chopped Tomatoes
- 1 Tin of Full Fat Coconut Milk
- 1 Onion - Diced
- 1 Red Pepper and 1 Yellow Pepper - Diced
- 1/2 - 1tsp Chilli Flakes - depending on your preference
- Crushed Garlic
- 500ml Fish Stock
- 1 tsp Smoked Garlic
- Fresh Coriander
- Salt & Pepper
- Rice
Step 1 - Sweat the onion and peppers off in a pan until they are nice and soft but not coloured, then add the garlic and spices and combine over a low heat.
Step 2 - Stir in your chopped tomatoes.
Step 3 - Start to boil your rice per the instructions on the packaging.
Step 4 - Add your chunky fish pieces to the mixture and then pour the full fat coconut milk over the top of your ingredients.
Step 5 - Add the fish stock and simmer until the fish is cooked (It should be flakey).
Step 6 - Sprinkle with chopped coriander and serve with your rice.
