What about completing user acceptance testing (UAT)? And signing?#UATs?off by the business?

Skipping UATs…
Will do you no good. If user acceptance testing isn’t completed successfully before the cutover date, the live operations are at risk.
They might be delayed due to various stumbling blocks found with the processes: performance issues, poor training, unsuitable processes or even inappropriate security accesses…
Incomplete UATs…
They will result in the solution not working properly. What then? You have to be prepared for a big-budget recovery, a lot of difficulties (technical and operational), not to mention a threat to business continuity due to system instability and unreliability.
