The key consideration is that both breathing and heart beats will create small deviation of the chest and those movements can be measured by the radar?
and to measure these small scale vibrations/displacements, we measure the change in phase of the FMCW signal with time at the target range bin?

How to detect some one is falling
The key algorithmic concept being:
When a person falls from standing, the change in height is rapid enough to be seen as different than sitting and triggers a fall event
