I look back at my career and remember all those struggles and battles to learn and progress from commis to 1er commis to chef de partie and battle up the ranks .

?The challenges of working very long hours, often spilt shifts ?on very little wages.

The denial of sharing time with family and friends and whilst everyone was celebrating, I was working in a high stress and often hot environment on the usual 14 hour day shifts.

My day off was spent catching up on sleep and paying bills preparing for the next 6 days of work.

This routine happened for more years than I care to remember with few changes other than new job titles, new hopes and new aspirations pushed forward by self-propelled motivation.

Today I see these pictures sat amongst some of the greats, the culinary legends that I look up to, several that were part of my inspiration and motivation from an early age.

Today I am proud to be President of this incredible iTi line up of chefs, but also so grateful for having gone through the hardship, challenges and learning curves that allows me to stand tall in such presence and environment today.

thanks for the inspiration Mr President we also wish to get there soon we shall keep pushing no matter the hard time we find the kithen is the best place to be we are proud to me chefs keep winning Mr President????
