Private Club Food Cost Percentages Unchained!

Why are food cost percentages at many private clubs so much higher than restaurants?

One simple example is the grilled chicken sandwich. There’s not much you can do to differentiate it between the club chicken sandwich and the local sports bar chicken sandwich.

So in my area, the grilled chicken sandwich at the club averages about $12.95 with a 42% food cost. The local sports bar restaurant has a menu price of $10.95 with about a 32% food cost percentage.

Is there really any reason that food cost percentages for pretty much similar entrees as local restaurants should be 10 percentage points lower than at private clubs? Especially when the product can sometimes come off of the same truck, with the same driver, on the same day, and from the same purveyor?

That Green Salad is hard to digest, especially for the Club Members who are financing excessive COGS for food and supplies.
