Poacher's Roast Sirloin

Spend your evening overlooking the Crocodile River, listening to hippos grunt and snort. These river giants even bellow, growl, and roar as they interact socially. Added to the crackle of the fire, you will ignite your hearing and tastebuds.

Ingredients:

  • 2-3 lbs sirloin roast
  • 4-6 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped (or 1 tbsp dried)
  • 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
  • Salt and pepper to taste
  • Optional: 1 cup beef broth for basting

Salad Pairing

Simple Green Salad:

  1. Toss the greens, tomatoes, cucumber, and onion in a bowl.
