'Planted' develops the first vegetable-based, additive-free, whole chicken breast

The Swiss foodtech startup, Planted is transforming the industry with a product unlike any other in the market: planted chicken breast. The product is the first large vegetable meat cut without additives that can be processed exactly the same as an animal chicken breast in terms of structure and flavor. The company uses only natural ingredients such as water, proteins and fibers of the yellow pea, Raps?l, salt, and yeast for product development. Planted combines protein structuring, biotechnology, and bio structuring, they start with proteins extracted from the plant and elongate through a wet extrusion before being put through a fermentation process to produce additive-free, bigger meat pieces with a complex structure and texture, juiciness, and softness.
This week the start-up also raised $72 million in venture capital funding, in order to expand its plant-based meat business, which focuses especially on complete slices of meat like skinless chicken breasts. The company’s product made to imitate real meat would be a treat for vegans. The innovation has the potential to bring a revolution to the plant-based meat market.
