It's so that Caseificio Gennari, with milk from the family farm "Agrigen" produces Parmigiano Reggiano Disolabruna: brothers Tino, Paolo, and Mary the mother with Rosangela follow the entire chain from animal care, production and processing of the milk to the finished product.
The supply chain traceability is guaranteed by the technical production of the Consortium Disolabruna: the members are subjected to strict controls and "very few are those who meet all the requirements."
Considered a cheese of considerable value and prestige (the forms produced daily are very few), richer in terms of nutritional calcium and phosphorus, which was awarded the excellence of Italian agro appreciated and requested by ltalian and foreign celebrities, this Parmigiano is produced using milk only "raw" (not subjected to chemical treatment or additives) only brown cows: peculiarities which gives it that unique in its typicality.
Parmigiano with rich taste and unique flavor, when cut exudes an intense, fragrant and appetizing, with a soft texture, intense yellow color interrupted by white of tyrosine crystals.
Recommended in combination with sparkling bubbles of Franciacorta a zero dosage, for a drink with friends, all served with a side dish "musical" for connoisseurs: it does not matter that it is classical, rock, jazz or blues... the experience will leave you "without words"...
