Our first harvest from the garden in early summer

The vegetables are doing well after we built the wire fence, and we did our first harvest of scallions, amaranths, and chives.

  • The few scallions are for general use while sautéing.
  • The purple amaranth is good for a vegetable meal sauteed with garlic.
  • The chives make a nice omelet as a substitute for onion, or can be sauteed with beef or pork as a classic dish.

This third year in gardening should turn out well as we are still waiting for others to mature such as melons, tomatoes, and peas as I just added another scope of five-ten-five.

The middle plants are red root amaranth whose seeds I bought from Amazon. 100 seeds for $5. They are big green plants and are not purple like the Chinese Amaranths in the front.

The deer will not touch the chives though they make great omelets

The purple amaranth is good tasting and nutritous though everyone likes the peculiar taste particularly the animals.
