Lobster Boss is the brainchild of Johnny Glover who formed the concept to feed his cravings for authentic Lobster rolls in Hong Kong. It initially began with a single pop up at a farmers market on Discovery Bay, Johnny and his team were literally blown away by the reception for the Lobster Rolls by the local residents, they sold out all 300 rolls by 3pm on the first day.
Swire soon came knocking and invited Lobster Boss for a 2 months pop up in a food truck at their Tong Chong Street Market in Quarry Bay, the queues were around the corner from day one, Larry The Lobster our cheeky mascot was introduced to the Hong Kong public at this market and he soon became the star of the show.

Lobster Boss will be opening in The Food Playground at K11 Musea , TST in April 2023. Other pop-up locations are planned for the food court at Sogo, Causeway Bay and also a food truck at Airside Kai Tak.
We are looking for an Operations Manager to oversee the openings of the new restaurants and manage the operations of the entire brand.?The ideal candidate will be someone who has a kitchen background and understands food production, but is also familiar with the front of house and customer service. He/she will be responsible for hiring and training a small team to open and operate 3-4 outlets in 2023 and another 4-5 outlets in 2024.
