Lobster Boss is the brainchild of Johnny Glover who formed the concept to feed his cravings for authentic Lobster rolls in Hong Kong. It initially began with a single pop up at a farmers market on Discovery Bay, Johnny and his team were literally blown away by the reception for the Lobster Rolls by the local residents, they sold out all 300 rolls by 3pm on the first day.

Swire soon came knocking and invited Lobster Boss for a 2 months pop up in a food truck at their Tong Chong Street Market in Quarry Bay, the queues were around the corner from day one, Larry The Lobster our cheeky mascot was introduced to the Hong Kong public at this market and he soon became the star of the show.

Lobster Boss will be opening in The Food Playground at K11 Musea , TST in April 2023. Other pop-up locations are planned for the food court at Sogo, Causeway Bay and also a food truck at Airside Kai Tak.

We are looking for an Operations Manager to oversee the openings of the new restaurants and manage the operations of the entire brand.?The ideal candidate will be someone who has a kitchen background and understands food production, but is also familiar with the front of house and customer service. He/she will be responsible for hiring and training a small team to open and operate 3-4 outlets in 2023 and another 4-5 outlets in 2024.

Job Description (not limited to)

  • Hands on supervisor who initially manages one store but also oversees 3 others
  • Manages the hiring and training of approximately 6 individuals working across 3-4 locations
  • Oversees the weekly rostas for all staff
  • Order products from central kitchen for all stores
  • Ensures that food costs, inventory control reports are kept up to date and accurate for all stores
  • Attend weekly marketing and operations meetings, help execute the marketing plan against a set budget
  • Be the face of the brand, handle media enquiries and special events
  • Working with the Group Executive Chef and Marketing Director to help develop new menu items for promotions and specials
  • Visit all stores on a weekly basis to ensure standards are up to scratch and that performance is meeting the budget

Candidates should be fluent in English and Cantonese, have a valid working visa and have the ability to grow with the company as the brand expands. Starting salary in the range of HK$ 25- 35K plus incentive scheme. Interested parties should send a CV in confidence to [email protected]
