One project, two challenges

The project manager’s requirements and the Chef's goals.

At B+S Commercial Kitchens, we understand that projects worth doing are never a solo endeavour. It takes a village when it comes to opening a restaurant or even refreshing an existing restaurant. Every member of the team, and their input, is invaluable. For example, the Chef ensures the kitchen’s workflow is optimised and the menu is achievable, whilst interior designers handle the front-facing aspects. Project managers ensure everything is under budget, whilst architects guarantee the space and equipment are up to code. Juggling the team’s input to create a product that satisfies all requirements is the specialty of B+S Commercial Kitchens. Uncle Su at The Star in Gold Coast was no exception. The team behind the restaurant approached us to help re-invigorate their kitchen whilst staying within the limitations.

The Brief

Nearly a decade ago, Dustin Osuch, senior project manager at F&B Capital Projects, was tasked with the massive undertaking of revitalising The Star Gold Coast. During the last eight years, Osuch’s team transformed Kiyome and Cucina Vivo. They also opened the Garden Kitchen and Bar, Mei Wei, Harvest Buffet and Nineteen at The Star. The latest chapter of the transformation was to revitalise the Imperial at The Star – a Chinese restaurant that brought flavours from various regions in China to the shores of Australia. With incredible head chef, Chef Song, and B+S Commercial Kitchens on his team, Osuch successfully transformed Imperial at The Star into Uncle Su at The Star.

Goal One: The Project Manager’s Requirements

Uncle Su was the amalgamation of Osuch and Chef Song’s desire for the Imperial at The Star. The F&B’s Capital Project’s plan was simple – expand Imperial’s dining area to seat twice as many guests without expanding the kitchen.

Goal Two: The Chef’s Goals

Chef Song’s goal, similarly, was to serve their customers a higher standard of food. Uncle Su’s menu was to feature well-known dishes, ingredients and cooking styles from different regions of China, traditionally cooked but redesigned to suit the Australian audience. The ambitious menu showcases Cantonese, Sichuan, Hunan, and Beijing cuisine. However, with the renovations underway and the obligations of the revitalised restaurant, it was clear the kitchen needed an upgrade.


Why we chose B+S Commercial Kitchens

To fulfil the goals of both men, it was clear that new technology was required in the kitchen. They needed something that would allow Uncle Su to serve twice as many guests in one sitting without sacrificing flavour, texture and the overall eating experience of the food. B+S Commercial Kitchens was a natural choice.

The Result

In order to keep up with the new demands of the restaurant without altering the kitchen space, Uncle Su required more powerful wok burners. B+S Commercial Kitchens worked tirelessly to redesign their current technology and create something special for Uncle Su. The new wok burners designed for the project are more powerful than ever and feature the B+S Commercial Kitchen’s exclusive hot brick setting – designed to protect chefs. In addition, the burner’s power output ensures that woks can reach a much higher temperature. This not only increases the speed of production in the kitchen – decreasing cooking times by half – but increases the quality of food, as it allows for the development of flavours exclusive to Chinese cuisine.

Uncle Su’s kitchen now features two double-hole Hi Pac wok burners with a prep table and one single-hole Hi Pac wok burner. That gives Uncle Su a total of five wok burners that can be used at once, allowing them to double their capacity.
