A niche species with mainstream ambitions

There’s no shortage of projects bidding to make marine species more mainstream – farmers of black cod, also known as sablefish, fall firmly into this category. However, given the remarkable length of time that Atlantic salmon have been highly profitable, it’s little wonder that salmonids continue to attract investment, while marine species largely remain the domain of aquaculture afficionados catering for small groups of ethically-minded gourmands.

Given the growing number of projects involving species such as kingfish and kampachi, perhaps critical mass for some of these fish can be reached before too long, but don’t expect any to be challenging salmon as supermarket staples any time soon.
