Nepalese food cooking technique
Nepalese cuisine encompasses a wide range of cooking techniques, many of which are unique to the region. Some of the most common Indian cooking techniques include:
- Jhaneko/Tempering: This is a technique where whole spices such as cumin, mustard seeds, and curry leaves are heated in hot oil or ghee until they sizzle and release their flavours. This is then added to a dish, usually a lentil or vegetable curry, just before serving.
- Grilling/ Tawa Fry : Grilled cooking involves marinating meat, fish, or vegetables in a mixture of mustard oil and spices, then cooking them over Grill or Tawa. The result is a smoky, charred flavour that is characteristic of tawa cooking , Taas is very popular in Nepal.
- Sealed pot : This is a slow-cooking method where meat, vegetables or rice are sealed in a pot with a tight-fitting lid and cooked over a low flame. This technique allows the flavours to meld together and results in a tender, flavourful dish. I love Pakku Masu , this is kind of delicacy in Nepal
- Bhuteko: This is a cooking technique where spices and aromatics are fried in oil until they become fragrant and the oil separates. The main ingredient, such as chicken or lamb, is then added and cooked until it is coated in the spice mixture.
- Biryani: This is very popular in Nepal nowadays a layered rice dish that is typically made with meat, vegetables, or both. The rice is first cooked with spices and then layered with the main ingredient and more spices before being steamed until fully cooked.
- Charring/Smoking: Charring or smoking is a technique where ingredients are cooked over an open flame or charcoals to impart a smoky flavor. This is commonly used for tandoori meats, kebabs, and vegetables.
- Pressure Cooking: This is a popular cooking method in India, particularly for lentils and beans. The ingredients are cooked under high pressure, which reduces the cooking time and results in a tender, flavourful dish.
