These predictions are based on my personal feelings as someone that follows the food industry for work as a well as a some projects that I have worked on recently. Also, I am actively trying to will some of these trends into existence.
- Emergence of "Silk Road" cuisines and restaurants. Flavours and dishes from central Asian cuisines like Uyghur, Uzbek, and halal Chinese food make their way into our culture and hopefully into restaurants near you.
- A new cooking competition show that is also a kind of dating reality show emerges. The convergence of these two genres is inevitable. Some pitch titles include: flavour of love, sizzling singles, recipe for love, heat is on, dash of romance. The possibilities are endless.
- Continued proliferation of venture capital backed chain restaurants that focus on automating the back of house while humans focus more on guest experience. Think blank street coffee, kernel, chippy etc..
- Quest for replacing alcohol continues. Non-alcoholic cocktails and beers run out of steam. This year, we focus on alcohol alternatives that give you a buzz but have different side effects, like GABA or Butanediol. This will predictably fall flat, and we try something else next year.
- Game meat is food of the year. The combination of weird inflation economics, the shift to regenerative agriculture, a focus on nutritional density and the existential burden of industrial agriculture leads to different meats on our plates.
