Modernizing Maturation: Improving Wines and Spirits with Oak Complements

On July 26 in San Francisco, at the 5th International Bulk Wine and Spirits Show, Lee Tatum, managing director of spirits at Innerstave, and Jason Dodge, managing director of winemaking at Innerstave, will share the stage for 30 minutes to discuss the modernization of maturation.

Jason Dodge and Lee Tatum will talk about their experiences using Oak Complements, a line of goods and services that enable beverage manufacturers to reap the same advantages of traditional barrel aging without having to pay the high price or have barrels' negative effects on the environment. They will share personal anecdotes to illustrate why they think these goods represent the wine, beer, and spirits industries' future.

Jason will talk about how using alternatives to traditional barrels can produce excellent wines in a regulated, scalable, and sustainable manner. To order to create the desired flavor profiles more rapidly, he will also go over the usage of micro-oxygenation and micronized oak. He will talk about how Oak Compliments, which smooth out the mouthfeel and soften the tannins in these wines, are a great way to complete them. Oak can soften the harsh tannins and give them a sense of sweetness in these flavor profiles.

Lee will talk about how these goods relate to the spirits business and how beverage companies can first season with oak effect using a more contemporary and deliberate method than traditional barrel programs. He will concentrate on Fiber Infused Oak substitutes, particularly as it applies to finishing bourbons and ryes, which achieve flavor precision through infusion using natural components. He will also discuss how distillers have considerably more control over the addition of various oak species, toast levels, and oak mix profiles thanks to Oak Complements. By enabling on-demand customization, a producer of various brands can develop distinct flavor profiles.
