The creative genius behind the highly acclaimed restaurant, Vite, in San Patrignano, Italy, Chef Fabio is renowned for his extraordinary knowledge of Italian culinary traditions and a “farm to fork” philosophy.

From November 15 - 19, enjoy his special menu with sommelier’s carefully chosen wine pairings. Highlights include appetizers of warm prawn carpaccio with lamb’s leaf salad, foie gras, pickled fruit, toasted pine nuts, and raspberry vinegar to enjoy with Avenir Brut, San Patrignano NV, and hazelnut crusted jumbo scallops with watercress cream, sprouts salad served with Aulente Rosso, San Patrignano 2014, braised Aulente veal cheek with oven-roasted endive and thyme-orange potato cream paired with Montepirolo, San Patrignano 2007, and more. There will also be creamed mojito, a heavenly dessert of rum gelato, muscovado granite, mint jelly and green lemon cream matched with sparkling Spumante Brut, San Patrignano NV.
