Miami: This Members-Only Restaurant Will Offer Private Experience

Miami’s Wynwood Arts District is about to get a new intimate restaurant named Haiku, but it’s not just another restaurant. It’s a P.R.E. – Private Restaurant Experience-in which 40 paying members decide who can dine with them in this 16-seat venue. Only one dinner party is allowed per night.

The menu favors an omakase, Kaiseki-style cuisine. Guests can expect to dine on 10-to-12-courses with wine, Champagne and sake pairings.

How it works is each member pays an initiation fee and must commit to five reservations (which have a per-event fee) for the one year membership. Reservations are booked on a first-come, first-serve basis. Members’ perks include invitations to “pop-up” events with guest chefs and sommeliers.

The 1,500-square-foot space features a 16-seat chef’s tasting counter. There are only chefs, no waiters as the focus is on hospitality while watching food preparation and presentation.

Chef Albert Diaz (Zuma Miami and Zuma London) is at the helm of this establishment. The menu will be seasonal and the sashimi-grade fish will be flown in daily from Toyosu Fish Market in Tokyo. Dishes may include matcha milk bread; togarashi pork crisp with cured lionfish and finger lime; smoked toro with pickled nasu, white ponzu and fresh wasabi; butter-poached king crab with uni, yuzu koshu and myoga; and smoked ice cream with coffee jelly.

The first seating takes place on February 14 – just in time for Valentine’s Day! After the one year mark, Haiku will open to the public and will offer late-night dining options with burgers and karaage (Japanese fried chicken).
