The James Beard Foundation named Chef Fleer one of the “Risings Stars of the 21st Century.” A native of Winston-Salem, NC, he helped establish the “foothills cuisine,” a unique concept that melds the rugged with the refined.
The menu at The Rhubarb reflects Chef Fleer’s dedication to the simplicity of nature’s bounty and its important role in the human ability to relax and enjoy time together over a meal. Relying on what’s in season at the time, the menu is ever in flux, offering locally sourced salads, appetizers (“Snacks & Shares”) that include a local cheese plate, full plates that offer uncomplicated delicacies like their titular Rhubarb Glazed Duck Confit with Sweet Potato Anna Cake, GTG Rainbow Chard, Sweet Garlic, Wet Walnuts, and Rhubarb Salsa. Wood Roasted Chanterelles with brown butter and thyme are among the local vegetable offerings. Both indoor and outdoor seating options can be enjoyed as the time of year allows, and its menu is far from prohibitive in terms of price, making this a wonderful gathering place for friends and family.
