Once upon a time, I embarked on a delightful journey in Galway. Well, to be precise, we stayed in an enchanting AirBnB nestled five miles outside the bustling city. Picture this: zero internet, absolutely awful cell service, and a charming swamp right across the road. Surprisingly, it turned out to be an idyllic and rejuvenating experience. We embarked on local explorations, discovering quaint coffee shops that invited us to indulge in moments of introspection. And when our internet cravings grew strong, we cleverly borrowed Wi-Fi from the downtown Costa until it inevitably ran out - mostly to stock up on movies for cozy nights in our cottage.

During our stay, we stumbled upon a unique gem on AirBnB: a Scone Baking class at Murrays. Intrigued and eager to expand my culinary horizons, I swiftly booked the class and eagerly awaited the day. As the class commenced, I found myself in the company of four other participants - three amiable girls forming a group, all hailing from the UK, along with a fellow adventurer from the US and a young German traveler who had just completed a four-day trek across Ireland. Together, we rolled up our sleeves and dove into the art of scone-making under the expert guidance of Doireann, our instructor. The result? A batch of delectable, Irish scones that delighted both the palate and the soul.

The scone recipe itself became a treasured possession, its pages adorned with stains and lovingly curled edges. With little prodding, whenever guests grace my doorstep, I eagerly embark on a scone-baking adventure. Plain scones, raisin scones, cranberry scones, and an array of cheese-infused scones have emerged from my kitchen, each one a testament to the joy of baking. But the true delight lies not only in the act of creation but in witnessing the joy of those who savor these delectable treats.
