Did you know that the art of maturing spirits in oak casks was probably stumbled upon by sheer accident? Whether it travelled by horse-pulled carts or set sail on boats, oak cask has been the vessel of choice for spirits, dating back to Roman times.
When crafting these vessels, coopers use heat to bend the staves into the iconic barrel shape. But here's where the magic happens: the inside of the cask is intentionally set ablaze.
Fast forward to American whiskey regulations, to earn the titles of 'straight whiskey' or 'straight bourbon,' new spirits must rest in brand-new, charred oak barrels. These barrels, often crafted from American white oak, are deliberately set on fire to meet legal standards.
This charring process caramelizes the wood's natural sugars, infusing the spirit with a symphony of aromas and flavours. Lightly charred oak barrels offer subtle notes of vanilla, coconut, caramel, cinnamon, and clove.
Take it up a notch with medium toasting, and you'll find heavier flavours of caramel, cocoa, roasted coffee, honey, and more. And when wood is charred to a deep toast, expect a tantalising blend of vanilla, caramel, toasted goodness, and hints of baked apple.
