Lucky number 3
The number 3 has proven to be quite significant for me this summer. I turned 33, Fantail Catering Management began 3 years ago and I have just completed my third Wimbledon Championships. I think it is important to reflect on what a whirlwind three years it has been since Fantail Catering Management became something more than just an opportunity to include my favourite Kiwi bird on a logo.
I can honestly say that when I started Fantail Catering Management, I couldn’t have imagined the journey it would take me on. It was meant to be a tool to allow me to work in hospitality without committing to a single venue as we had no idea how long we would stay in London. This has turned into a trusted name to some of the most respected caterers, venues and events throughout the country.
From Fortnums to Glastonbury, Somerset House to Tobacco Dock, Wembley to Ascot, Goodwood to Toms Kitchen and River Cottage. I have been lucky enough to manage, consult and deliver at some of the most iconic and recognisable events and venues across the country. Not bad for a pub manager from Leeds.
The idea for me was to have no overheads, maximum flexibility and no seasons. Just my laptop, my suits and my trusted pen and pocket books. This has evolved to now include mobile pizza ovens and a team of fantastic hospitality professionals to call on when needed.
I just want to thank all the staff I have managed since moving to London and the trust my clients have given me to deliver for them over and over again.
It’s time to push on again and look into offers of possible collaborations and global events.
