What I Learnt Today #103 I Art & Culture Saturday’s

Jiro Dreams of Sushi, which became a landmark film on cuisine and chefs directed by David Gelb, led to his fascinating series on Netflix - Chef’s Table. Now in its 6th Season it has featured some of the most iconic chef’s from around the world. Exquisitely shot and equally in-depth in its search for the back stories, influences and passion it has a lot to offer to the viewer. Tomas Vysny wrote an article in Medium on lessons that one can extract from the series which I found to be on the ball. 

According to him one should -

1 Embrace and Master The Traditional Way First

2 Be Bold To Do Things Differently When The Time is Right

3 Be Authentic

4 Prepare for The Battle

5 Develop Meticulous Attention to Detail

6 Push Through the Hard Times

and he illustrates each point with examples from episodes within the series. It is an easy companion read - not about the food or cuisine but take aways for anyone with passion that she is pursuing. 

My personal favorites are the the episodes on Francis Mallmann ( S1 Ep3) an Argentine celebrity chef specialising in Argentine and Patagonian cuisine specially focused on Patagonian methods of barbecuing food. The visuals on this one are spectacular as is his approach to cooking.

Also fascinating was Magnus Nilsson (S1 Ep6) and his 2.5 hours of tasting menu spanning 30 courses, meticulously planned and served like an orchestra in the back of beyond in Sweden.

The personal interests of the Chef's - from sustainability to industrial farming to culture and preserving traditional cuisine and culinary processes all make the series more than a mere food show. 

The grit, focus and true human stories that David Gelb brings every episode (he directs them occasionally) and the lyrical style of shooting food takes the series beyond a documentary on food to a riot of ideas.
