Lian Fen/ Laphing

Liang Fen

Known as Laphing or Laping. This dish is originated from Sichuan region in China where it was known as Liang Fen. Then travelled across whole Asia impacting various regions and developing various versions.

It is a spicy jelly like cold noodle dish found in streets. They are cooked overnight and mixed or rolled with Sichuan Pepper paste, Garlic, Vinegar and Soy Sauce. Then garnished with more red chillies and green onions which makes it one of the most addictive dishes that tingles with everyone’s tastebuds.

Two widely found versions are dry and wet; wet one has thinly sliced noodles in a broth with soy and red chilli. Dry version has garlic and red chilli rolled into noodle sheet. I personally prefer to eat dry version more.
