There are rather demanding co-op games like Factorio. Even Deep Rock Galactic requires much longer onboarding than Lethal Company or Content Warning. Also, what about Ark: Survival or Rust?
Yes, there are massive audiences that love more time-consuming games with more elaborate and diverse game mechanics. However, the games above required much more production resources and balancing numerous moving pieces. At the same time, titles like Lethal Company and Content Warning proved highly effective with comparably few funds by giving players what they wanted in a simple package.
