Kickin' Cauliflower Chilli
Our recipe packs a punch with loads of veggies, protein, and bold spices: the perfect dish for those who want to enjoy a hearty, flavorful meal that's both healthy and environmentally friendly.
Ingredients:
1 large head of cauliflower, chopped into bite-sized pieces
1 can of black beans, drained and rinsed
1 can of kidney beans, drained and rinsed
1 can of diced tomatoes
1 onion, diced
2 bell peppers, diced
4 cloves of garlic, minced
2 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
1 tsp oregano
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1/4 tsp salt
4 cups of vegetable stock
1 tbsp olive oil
optional toppings: sliced avocado, cilantro, lime wedges, shredded cheese, and/or tortilla chips
Instructions:
Heat olive oil in a large pot over medium-high heat. Add onions, garlic, and bell peppers and saute until softened, about 5-7 minutes.
Add in the cauliflower and spices, stirring constantly for 2-3 minutes.
Pour in the vegetable stock, diced tomatoes, and beans, stirring everything together.
Increase heat to high and bring the mixture to a boil. Once boiling, reduce heat to low and let it simmer, uncovered, for 30-40 minutes. Stir occasionally while simmering.
Once cauliflower is tender, remove from heat and let the chilli cool for a few minutes before serving.
Ladle the Kickin' Cauliflower Chilli into bowls, and top with sliced avocados, cilantro, tortilla chips, or your preferred toppings.
