Application Testing Every Step of the Way

The Bakery Innovation Center Expertise in Action
A commercial baking client came to Kemin looking to eliminate the strong off-flavors and aromas in their donuts. The client had a target of a 10-day shelf life at ambient temperature without any noticeable aroma or flavor issues.
Kemin provided the client with samples of our FORTIUM? and EN-HANCE? to use in their formulation in efforts to eliminate the undesirable taste and aroma. Finished samples were sent to the CLS team to perform sensory analysis and analytical testing at the BIC. They performed analysis on the appearance, aroma, texture, taste, lipid peroxidation, and decomposition-causing hexanals over the course of 10 days.
Results showed that throughout the 10-day shelf life, the donuts treated with Kemin solutions were more moist than the control formula, and ultimately both batches had the flavor throughout the shelf life.
