At any given moment, your behavior is driven by a combination of your personality and the environment. The magic is in the mix.
Some of our personality traits are so strong that they seem to transcend our present circumstances. Think of the gregarious extravert who can't help but make small talk whether at a wedding or funeral.
Other characteristics are quite malleable and our environments can dictate our behavior quite a bit. The most intense cults can make loyal servants out of otherwise independent free thinkers.
Personality has a strong genetic component. Which means behaviors are not just learned. Nor are they simply genetic. It's both. Beware of oversimplifications like this one.
