"... NORTH FORK: Two Huntington chefs are looking east. Huntington's showman chef Tom Schaedel (Rockfish, Coolfish, Passionfish and more) who got his rep initially at Panama Hattie's, has just opened Jedediah Hawkins Inn and Restaurant in Jamesport. The North Fork eatery will have a Schaudelian menu but the man who will be running the kitchen daily for Schaudel is his buddy Michael Ross, formerly of Fiddleheads on New York Ave. - the spot where Wild Fin now swims - { ??? } - Looking to capitalize on the North Fork's booming wine industry, their success could attract a number of other entrepreneurial chefs to the North Fork. As a destination, it's closer to us than the Hamptons. Good luck Tom! {stet}"

"Sallying North With a Fork What's good to eat on the other side of the bay
... Working up an appetite, I wound my way to Jedediah Inn of South Jamesport { Hm! SOUTH Jamesport ? }, a Charles Adams-esque looking place on the outside. Approached through a long driveway, the built in 1863 and restored in 2005, is lushly landscaped with ponds, fountains, a huge vegetable garden in back, and a charming two-seater outhouse. Don't worry, it's purely decorative these days.
After we enjoyed a glass of the chef Tom Schaedel's Choice Chardonnay made especially for him by Paumanok Winery, we were presented with fresh herb-infused rolls with a dish of olives and a slice of goat butter. That goat butter was so good. { Aha! something got her goat } I begged the chef to sell me a slab of it to bring home. Into my overstuffed cooler it went!
A sprightly blue-claw crab salad and a colorful melon gazbacho were next, followed by Jurgielewicz duck breast. I noticed that the guests at Jedediah's seemed different from guests at the finer restaurants on the South Fork. There was no barking for the best table, jockeying for position, and rubbernecking at hotshots.
The atmosphere was relaxed, almost reverential. These people were actually here to enjoy the marvelous food! After some dainty peach tarts filled with lemon curd we waddled around the beautiful grounds with a last glass of Merlot riesling.
The East Hampton Star dated January 17, 2008:
"High Cheese
Cheese lovers may also want to know that at the Jedediah Hawkins Inn in Jamesport the tradition of 'high tea' has been supplanted by a daily "high cheese" daily between 2:30 and 4 p.m. The cheese platter, for $19.95 per person, is accompanied by merlot jelly, berries, homemade bread and a glass of wine."
