Ingredients:
2 cups all-purpose flour; plus extra for sprinkling
1 tsp baking soda
1/2 tsp salt
1/2 tsp cream of tartar
2 tbsp butter
1 cup buttermilk
1/2 cup raisins
Directions:
1 Heat the oven to 400°F. Grease a baking tray.
2 Sift the dry ingredients into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
3 Make a well in the center and pour in the buttermilk and add the raisins, mixing quickly with a broad-bladed knife, until the mixture forms a soft dough.
4 Turn out onto a floured surface and knead lightly. Pat or roll out the dough into a round 1 1/2" thick and place it on the baking tray.
5 Mark the top into 4 sections and bake for about 20 minutes until just colored and the base sounds hollow when tapped. Cool on a wire rack covered with a clean tea towel- this keeps the crust soft.
