Impossibly Healthy Crepes!

Crepes are delicious and versatile. They can be sweet or savory. They can be served as any course of a meal. And no matter what you fill them with, they have an air of sophistication and class. In fact, they feel so special to me that I feel like I have to have a special occasion to make them.
But one thing they aren't known for is being healthy. Well, throw that idea away.
I made some ordinary crepes from a recipe that I got from a random online website. Then I mixed some natural yogurt with my favorite protein powder -- whey isolate in chocolate flavor -- I always go chocolate when given an option.
As each hot, delicate, delicious crepe came off the griddle, I spooned a few rows of my yogurt/protein concoction plus some honey, just because I could. Roll it up and wait for the next one. The other nice thing about crepes is that they cook so quickly that the first one was still warm by the time I finished the batch, which gave me 4 generous crepes.

I admit I ate all 4 myself and while they are a bit high in calories -- 860 for the whole dish -- it's hard to find another meal where you can get such great protein to fat ratios. In fact, that's reason enough to celebrate by making crepes any time I feel like them.

2 年I cut back on white flour so I'm wondering if it would work with another type of flour. Being in Mexico, I have plaintain and yuca flour. I wonder if they would work. I have used them to make hot cakes. Let's see!
