Mise en Bouche translates to "a bite size single serving H'ordeuvres". This is a great way to easily get something in your clients belly and start their experience off right at your restaurant. Your chefs or cooks would prepare a simple pate or smoke salmon and chive mixture and simply put them on a cracker or peeled cucumber slice and serve them to your guest as they arrive. We use to serve them to our guests at my bistro and we got so many compliments...Try it for a week....it may be just the thing to bring them back...JB
