I've got a confession to make – in my early roasting days, I avoided end-of-season coffee like the plague. The allure of "Fresh Crop" was my guiding light, and buying leftover stock felt like veering off the path of quality and sustainability that I held dear for both me, my clients and the industry as a whole.

But, let me tell you about a game-changing experience that completely flipped the script.

When building a blend for a client where we had a very tight restraint around budget and was needing to find a way to marry the budget and flavour goals in a creative way.

Caleb Holstein nice story and practice. Most actors find it really difficult to challenge what they have always done. I have seen this either in coffee growers as in roasters and there are huge win- win opportunities in the middle. There are really nice coffees that you can get at competitive prices by oppening your mind. You make me think, for example, in higher deffects coffees which you can get at lower prices and some of those can even have specialty cup profiles.
