From Kitchen Skills to Confidence: Celebrating Our Latest Culinary Graduates
On February 8, our most recent cohort completed their Culinary Training. Over the past three weeks participants learned the soft skills needed to be working in a kitchen like the roles and responsibilities, working in a team, and vocabulary used in the kitchen. They also obtained skills through hands-on training which includes kitchen and workplace safety, knife skills, food safety and handling, and food preparation.?
One of our Participants, Pagne, remarks how much the training has impacted them, “This training gave me confidence. Every day I was surrounded by other participants and Chefs who were supportive and cheering me on, which made such a big difference.” ?
To celebrate the end of their training and to allow our Chefs to see how much they have learned, participants cooked family-style meals. Many of the dishes that were whipped up in the kitchen were inspired by the culture participants and stories that they’ve experienced.?

A Taste of History
1800s: During the height of American slavery (1800–1865), approximately 30,000 Black Americans escaped to Canada through the Underground Railroad. Many brought Southern-style cooking, later known as "Soul Food," introducing dishes like cornbread and BBQ to the city.
