HOW ABOUT SOME HEALTHY CHICKEN AND SOY CHORIZO PAELLA THIS WEEKEND?
Paella is one of our favorite Spanish recipes and is easy to make healthy! It is also super simple to make and requires just one pot/pan.
Traditionally, paella is made with meat or seafood but with so many great meat alternatives this is an easy swap, at least for the chorizo in this case!

Ingredients
4 tsp canola oil
2 oz. seitan chorizo crumbles, such as Upton’s Natural Vegan Chorizo Seitan Crumbles
1? lbs. boneless, skinless chicken breasts, diced into bite-sized pieces
2 cloves garlic, minced
1 scallion, trimmed and minced
4 cups cauliflower rice
Pinch of saffron (optional)
1 cup diced tomatoes
1 cup green beans, cut into ?-inch pieces
? tsp each (or less) salt & pepper
Directions
- In a large skillet, heat oil on medium high and cook the soy chorizo and chicken until brown, but not cooked through.
- Add the garlic and scallions and sweat for about 2 minutes.
- Add the cauliflower rice, saffron (if using), tomatoes, and green beans to the paella. Cook for about 10 minutes, season with salt and pepper, and serve hot.
Per serving: 300 calories, 10g fat, 13g carbohydrate, 41g protein
