How to recognize real Champagne?

How to recognize real Champagne?

To recognize real Champagne is first of all to know how to read its label, on which certain mandatory indications must appear giving precise indications on the origin of the wine and its elaboration.

There is a diverse range of champagne in the trade and fine grocery stores. Do you know how to choose real champagne?

I reveal the clues that will allow you to better select your bottle.

Emerald of celebrations and various celebrations, Champagne is part of the elite of sparkling. Associated with the words Prestige and Quality, Champagne meets very specific criteria. Champagne is the only one produced on the Champagne lands!

  • The name or business name of the producer, the name of the commune of its head office and the name "France" (+ the name of the commune where the wine is produced so different from the head office)
  • A professional registration number issued by the Champagne Committee preceded by initials which provide information on the professional category of the producer *
  • The identification of the lot (or directly on the bottle),
  • The mention of allergens (egg sulfur dioxide, sulphites or sulfur dioxide),
  • The statement "the consumption of alcoholic beverages during pregnancy, even in small quantities, may have serious consequences for the health of the child" **
  • The "green dot" logo for the developer, who has signed a contract for the recovery of packaging with an approved company,
  • If applicable, the year of the vintage or the particularity of the cuvee (Blanc de Blanc) White of white, rosé, (Blanc de noir) (white of black, etc.
  • Information on grape varieties, date of disgorgement, sensorial characteristics, food and wine associations, etc.
  • The words "Product of France"

On his identity card, discover his nature!

The indications relate to the nature of the product itself:

  1. The designation "champagne" is an obligation. This name ensures that the wine comes from the Champagne terroirs.
  2. The name of the town or village from which it came and the name "France". This name may be indicated by the words "Grand or Premier Cru".
  3. Its residual sugar dosage is known by the words "extra crude", "crude", "dry" or "semi-dry" which go from the least sweet to the sweetest.
  4. The "vintage" notification ensures that the champagne was produced with one of the grapes from 100% of the vintage of the year inscribed on the bottle. It is the guarantee of a good year.

The details of the label

In addition to its land of origin, Champagne must meet seven specific criteria to qualify for this designation: manual picking, specific press, assembly, second fermentation in the bottle, stirring, disgorging and dosing and minimum ripening time.

The label contains a professional registration number issued by the Champagne Committee. Indicating the professional category of the producer, this number is preceded by two important initials which define the true status of the producer in question.

1. CM - Cooperative handling. It develops, in its premises, the wines coming from the grapes of its members and sells them.

2. NM - Trader handling. It is a natural or legal person who buys grapes, musts or wines and ensures their elaboration on its premises and markets them. The major brands of Champagne all belong to this category.

3. RM - Harvesting harvester. A harvesting harvester ensures the elaboration on its premises, of the only wines resulting from its harvest and markets them.

4. ND - Distributor trading. He buys wines in bottles on which he places labels on his premises. Then sells them.

5. MA - Mark of buyer. When it comes to a brand that does not belong to the professional but, for example, to its customer (supermarket, famous personality, etc. .. who wants a Champagne to his name)

6. RC - Collector-Cooperator. He takes over from his cooperative wines being prepared or ready to be marketed.

7. SR - Society of Harvesters. It develops wines from the harvest of its members belonging to the same family and markets them.

How to preserve champagne

Open bottle of champagne

If it is better to drink the champagne as quickly as possible once the bottle is opened, it is possible to keep a bottle of champagne begun by plugging the bottle well.

Refill the bottle of champagne

Special champagne stopper

Large champagne consumers have special champagne corks.

Cap of champagne steel carafe

Thanks to this cap, the champagne can be kept for up to 2-3 days in the cool.

No special champagne stopper

If you do not have a special champagne cap, cut the bottle cap with a knife so that it can fit into the bottle neck.

But you will not be able to keep the sparkling champagne over a day.

Replace the bottle with a spoon

NO - Have a spoon in the neck does not work!

It is a legendary process a little ridiculous but a perfect uselessness.

Bottle storage

A bottle of champagne is preserved in its original carton, in a cool place at a temperature between 8 and 12 °, sheltered from drafts, and especially dark,

Bottle standing or lying?

The bottles must be laid down. If the bottle of champagne is not in the horizontal position the cap that will not be soaked, will dry out, causing gas loss. The champagne will no longer sparkle. Some and rare amateurs, however, opt for the vertical position of the bottle, in order to avoid the champagne contact of the stopper

How long can we keep a bottle of champagne?

Champagne is not like the very good red wine, it does not improve with age. When it is placed on the market, it is already mature.

Do not keep it for more than a year or two !!

The vintage champagnes and the great cuvees them, especially if it is a magnum can keep longer, because the volume of the bottle is important, the better the conservation.

Champagne importantly implies success or occasion. Or simply good taste. Yet it's simplicity and enjoyment belies it's complexity. This article helps unlock the myth. Personally I prefer an RM. Récolte Manipulant. You know the source and it's loving production. And at the end of the informative article is a rewarding comment for all those ‘stuck’ in the middle. Or the past.
