Homemade Chili Recipe

It's that time of year again. As the seasons change and the light of day becomes shorter we tend to find comfort in our sweaters and fireplaces as we breakout our crockpots to fill with soups and stews.

The following recipe is one I have worked on refining and trying to perfect since I was a child. One thing I know is that I will never perfect any recipe but this one is the closest I have gotten. So please enjoy.

In a blender: add 2 cups of water, 7 Roma tomatoes, 1 Beef Steak tomato, 4 tomatillos, 1 jalapeno with seeds, 1/2 yellow onion, 1/2 bunch cilantro, 1/2 cup of chili powder, 2 tbsp black pepper, 1 tbsp cumin, and 1tbsp salt then blend into a sauce and pour into crockpot.

Add 4 cubed Roma Tomatoes, 4 cubed tomatillos, 1 cubed Beef Steak Tomato, 2 cubed jalapeno's without seeds.

Add 2 pounds of cooked ground beef and 1 pound cooked ground pork.

Add 48 ounces of red kidney beans to a pot of boiling water, let simmer for 2 minutes then drain and add to the crockpot.

Dice and add rest of the yellow onion.

Bring everything to a boil then let simmer for a couple hours with the lid on. Take the lid off and continue cooking on low temp for 1 hour or until chili reaches the thickness you prefer.

Best served with a side of sour cream and cheddar cheese.
