Here is that dough recipe I promised.

A lot of waiting around…worth it!
?1.??In a big bowl
7 ? cup flour ( I use 00 flour)
3 1/8 warm water 90 to 95F
Mix with your hand until all the flour is incorporated and no flour is left at the bottom of the bowl.
You can wet your hand with warm water as many times as you need to so that the dough won’t stick to you and all the flour will be mixed in.
Cover and let sit for 30 minutes

2.??sprinkle 1 tbsp dry active yeast and 2 tsp of sea salt on top of the flour mixture mix well by hand until it is all incorporated- about 5 minutes. Let it rest for 5 minutes and then mix it again
3.??cover the dough with a tea towel for 10 minutes and then mix it again- always wetting your hand …it is a very wet dough
4.??cover it again and let it sit 1 hour and 15 minutes then fold it again and let it sit for 3 hours
5.?the dough should fill your entire bowl by now.?drop the dough onto a well floured surface and cut into 6 pieces.
6.??Roll each piece in a generous amount of flour and make a ball- folding under the edges
7.??Place the balls on a cookie sheet and cover with a tea towel for at least an hour
They should be really plump and fluffy at the end of that hour.
I use more flour to stretch it out…if you have a wood oven 600 to 700 for about 8 minutes
If you are using your regular oven 500 for about 18 to 20 minutes
