“Cellar temp” would mean something different if it had originated in The South. Take a look at the temperature trends below. This chart is the Average minimum and maximum temperatures in London England. The hottest point barely tops 80 degrees. Now, compare that with Arkansas which climbs into 3 figures during the summers with 90% plus humidity. 80 degree nights are not uncommon. Cellar temperature ranges between 50 and 60 degrees. Combine that with half the CO2 and you have a great lake beer? No way. A beer at 50 degrees while the temperature is cool and brisk sounds delightful. Real Ale while watching a baseball game in 95-degree weather sounds awful. My wife and I were in London during the hottest time of the year, and what did we see everyone drinking? Cider and Lighter Beers (Pilsners). Frozen beer towers were common advertising ICE COLD beer. In my opinion, when the cicadas are combusting in mid-air due to the heat, an ice cold Behemoth Pilsner sounds perfect. I will wait until the cooler months before pulling on the beer engine for a rich tasting, smooth real ale.
