Hard shells shouldn't be a hard sell

There are few animal proteins that are more healthy or farmed in a more environmentally sustainable manner than mussels. But, despite all the positives, the sector is badly in need of revitalisation, especially in Europe. Niclas Riecken’s research reveals a number of promising innovations in the pipeline. However, given that these are mostly early stage or aimed at niche markets it would be good to see a wider range of applications being explored – both for the nutrient-rich meats and the mineral-rich shells. In the meantime we can all do our bit by simply eating more of them.
