Gwamari

Gawamari

Gwaramari literally means “Gwara” meaning round and “mari” mean brea in Newari a local language spoken by one of the foodie community from 128 community from Nepal, mostly habitat in Kathmandu Valley. This is a famous breakfast dish typically served with milk tea but I like with mint from garden and green chilli chutney. It's best served warm.

It is a popular Newari snack. It is a deep-fried, pastry-like dish. It is made from kind of donut batter that is commonly enjoyed during festivals, special occasions, or as a street food snacks. Gwaramari has a simply bitesize round shape puffy and soft inside and crunchy outside

Here's a simple recipe for Gawamari,

Ingredients:

  • 250 gm all-purpose flour
  • 2 gm salt
  • 2 gm baking powder
  • 1 gm turmeric powder optional
  • 1 gm cumin powder
  • 250 ml water (as needed)
  • 1 litre Oil (for deep frying)


Instructions:

  1. In a mixing bowl, combine the all-purpose flour sieve first, mix with baking powder and salt. Gradually add water make batter. Cover the batter to be settled and let it rest for about 30 minutes.
  2. The batter has rested, take it into small portions and drop with tablespoon or use small scoop to make one bite size portion.
  3. Heat oil in a deep frying pan or a deep fryer. Carefully slide the gawamari into the hot oil and fry until golden brown and crispy around.
  4. Once cooked, remove the gawamari from the oil and drain on paper towels to remove excess oil.
  5. Serve hot as a snack or appetizer. Gawamari can be enjoyed on its own or with a side of your favourite chutney or any dipping sauce of your choice.
