My kids are absolute chocolate monsters, but with homeschooling, working from home and the never ending to do list mounting up, I haven't felt much like making or baking any healthy homemade treats of late.
So the other day - whilst playing nerf guns with one child and doing science experiments with the other (as you do) - I thought about the quickest treat I know of, that could also double up as our Sunday Roast dessert.
Because I do love getting creative in the kitchen. I just don’t like spending my life in there!
So on remembering I had a load of avocados that needed using up, I thought of the amazingly quick, delicious, and healthy chocolate mousse recipe that I haven't made in yonks.
Perfect.
Yes, avocado. In a dessert? I know.
But please trust me when I say this is SO good.
I even served it to my father-in-law once, way back when we were allowed to socialise, and he had absolutely no clue (and he is someone who balks at most green things - especially healthy green things).
This chocolate mousse really is everything you want in a dessert. It’s rich, creamy and oh so indulgent. Yet its main ingredient, avocado, is packed with goodness, from its heart healthy fat content, to its blood sugar stabilising fibre, and immune supporting nutrients such as Vitamins K, C B5, B6, E, Potassium and Folate.
But mostly importantly, you can throw it together in a matter of minutes, so even when juggling a million tasks, you can still enjoy a homemade treat.
Guilt Free Chocolate Mousse In Under 3 Minutes
Ingredients
- 2 avocados
- 4 tbsp raw cacao powder
- 4 tbsp organic maple syrup
- 2 tbsp cold pressed coconut oil
- 2 tbsp almond, coconut, or favourite milk
- Pinch of sea salt
- Berries to serve
Preparation
- Place all ingredients, apart from the berries, into your blender or food processor and whiz up until you have a smooth mousse like consistency
- Divide into 4 ramekins or espresso cups, set in the fridge for 20-30 minutes and top with berries before serving
