Grilled Prawns - Infused with Ginger Herb Butter by RATIONAL

Ingredients (Number of portions: 4)
12 prawns (>8/12)
200 g butter, soft
Herbs to taste, such as chervil, parsley, fresh coriander
0.5 tsp fresh ginger, grated
Garlic (optional)
Pepper and fleur de sel
Method fish, iLC grill
Slice along the backs of the prawns and devein them, but do not remove the shells. Make a strongly flavoured herb butter using the herbs, butter, pepper and salt and transfer to a piping bag.
Now pipe the herb butter under the shells and grill the prawns as specified.
A baguette and some grilled asparagus make a good accompaniment.
NB: Infused refers to the herb butter which infuses the flavours directly into the prawns' flesh under the shells during grilling.
