GARLIC CHICKEN WITH ROASTED CAULIFLOWER

OMG!! Tried this recipe last night! Simple and quick to pull together!! It a must try meal!!

INGREDIENTS:

  • 8 ounces Skinless Chicken Breast
  • 16 ounces Cauliflower, trimmed
  • 2 Garlic Cloves, Minced
  • 5 Teaspoons Olive Oil
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt
  • 1 Ounce Dried Walnuts

INSTRUCTIONS:

For Chicken:

  • Preheat oven to 375° Fahrenheit
  • Place chicken on baking sheet/or grill
  • Spread 1/2 teaspoon of garlic onto each breast
  • Bake, uncovered until done, about 30 minutes


For Cauliflower:

  • Preheat oven to 425° Fahrenheit
  • Heat a skillet over medium and toast walnuts for 1-2 minutes, and then chop them into pieces
  • Wash and trim cauliflower
  • In a bowl, combine cauliflower, olive oil, salt, and pepper.
  • Spread out the cauliflower evenly over a baking pan and cook in oven until golden brown, about 20-25 minutes
  • Toss the cauliflower with the walnuts.
  • Serve with the chicken.
