Thank you Anda Penka for inviting me along to co-represent Fermentful in this fascinating #techchill2023 event. Ensuring accessible nutrition is a challenge and responsibility for individuals and organizations alike. As we look to the future of the nutrition ecosystem, several key topics emerge as critical to promoting health and sustainability. Summarizing my thoughts on the subject of food future I emphasised these:
AI collaboration, which offers new tools for deepening our understanding of consumers' needs and aspirations. By harnessing the power of algorithms, we can persuade consumers towards healthier and more economical consumption habits, leading to better outcomes for both individuals and society.
Traditional wisdom incorporation into modern food products involves leveraging thousands of years of human intuition about the roles and benefits of food ingredients and preparation techniques. By amplifying and reintegrating this traditional knowledge into new food products, we can create a more holistic and sustainable approach to nutrition that is accessible to anyone, anywhere in the world.
Microbiota management is another key area of focus, as research has shown that our gut microbiome plays a crucial role in our overall health. By designing food that promotes the nourishment of both bodies and microbes, we can promote better health outcomes and potentially reduce the risk of certain diseases.

Plant-based and lab-grown foods are also gaining in popularity as people become more health-conscious and concerned about the environmental impact of meat production. These alternative protein sources offer a more sustainable and ethical alternative to traditional animal farming.
Personalized nutrition is also emerging as an important area of research, with advances in genetic testing and personalized medicine making it possible to tailor diets to an individual's unique genetic makeup, lifestyle, and health goals.
Finally, sustainable food production and food waste reduction are crucial for creating a more resilient and environmentally friendly food system. Precision agriculture technologies and regenerative agriculture practices are just two examples of how we can work towards this goal, reducing waste and minimizing our carbon footprint.
