Fun Lunch Friday! A Taste of Italy

Welcome to another Fun Lunch Friday! This week, we’re bringing you one of my favorite Italian dishes: Chicken Piccata. Tender chicken breasts sautéed in a bright lemon butter sauce, accented with capers and complemented with a zesty, lemon slush.

For our sides, we’ll serve butter and herb Bucatini. To round out the meal, enjoy rustic garlic bread that’s perfect for soaking up that luscious sauce, alongside a small spring salad to keep things light and fresh.

Ingredients

Chicken Piccata

- Chicken breasts

- Lemon juice

- Butter

- Capers

- Sauvignon Blanc

- Salt and pepper to taste

Bucatini with Herbs and Butter

- Bucatini pasta

- Fresh herbs (parsley, basil, thyme, Rosemary)

- Salted butter

- Salt and pepper to taste

Rustic Sourdough Garlic Bread

- Loaf of sourdough bread

- Salted Butter

- Minced garlic

- Parsley

Lemon Slush

- Fresh lemon juice

- Honey or agave syrup

- Ice

Small Spring Salad

- Mixed greens

- Cherry tomatoes

- Cucumber

- Olive oil and balsamic vinegar dressing

Instructions

Chicken Piccata

???- Season chicken breasts with salt and pepper. In a skillet, melt butter over medium heat and add chicken. Cook until golden brown and cooked through. Remove chicken and set aside.

???- In the same skillet, add Sauvignon Blanc and capers, scraping up any browned bits. Add lemon juice and adjust seasoning. Return chicken to the skillet, coating it in the sauce.

Bucatini with Grilled Lemon

???- Cook bucatini according to instructions. Reserve some pasta water.?

???- Grill lemon halves until charred. Toss cooked bucatini with grilled lemon juice, olive oil, and reserved pasta water to create a silky sauce.

Rustic Sourdough Garlic Bread:

???- Mix butter with minced garlic and parsley. Spread on sliced bread and bake at 375°F until golden brown.

Spring Salad

???- Toss mixed greens, cherry tomatoes, and cucumber with olive oil and balsamic vinegar for a refreshing side.

Lemon Slush

???- In a blender, combine fresh lemon juice, honey or agave syrup, and ice. Blend until smooth. Serve immediately with a garnish of lemon zest.
