From Our Kitchen to Yours: Laura's Loaded Queso

Who doesn't love queso? I'm not sure that such a person exists, but if one does this recipe might convert them to a believer. 

I love it because it's great for a party, as a game time snack, or even a full blown dinner for the family. Don't worry, Moms, all the major food groups are accounted for and the kiddos LOVE it! I can attest to that because I have 3 of my own that never agree on what's on the menu and rotate between about four actual meals...so this one's a big win.

Ingredients for this are few and minutes it takes to prepare are minimal. I think it takes me about 10-15 minutes from start to finish that's mostly just browning your meat. Which reminds me, my recipe calls for pork sausage as your protein, but you could easily substitute for ground chicken, beef or turkey if that's your jam. Just be sure to season it up good, because the pork sausage is that gives this dish most of its flavor. 

Now let's get into the recipe so that you can head to the store and grab your ingredients, because you'll want to make this ASAP.

Loaded Queso

Ingredients

  • 1 lb ground pork sausage make sure it says "sausage"
  • 8 oz cream cheese 
  • 20 oz Rotel diced tomatoes & green chilies
  • 15 oz can of corn, drained
  • 8 oz medium cheddar cheese shredded

Optional toppings & add in suggestions:

  • Chopped black olives
  • Fresh chopped tomato
  • Chopped green onion (this is what I used to garnish)
  • Add in black beans and chopped jalapenos
  • Mix in taco seasoning and serve with sour cream

Directions

  1. In a large pot or deep skillet over med/high heat, brown your sausage, breaking it apart with your spatula (the sausage releases enough oil to grease the pan, so no need to do that ahead of time). When it's browned, remove excess grease by pushing a paper towel around the pan with a spatula until fully saturated then discard.
  2. Cut the cream cheese into pieces and stir it into browned pork until melted and incorporated.
  3. Add 2 cans of un-drained Rotel tomatoes, 15 oz can drained corn, and 8 oz shredded cheddar (reserve some cheddar to garnish the top too). Cook over medium heat, stirring occasionally until cheese is melted. Remove from the heat, garnish with fresh tomatoes, reserved cheddar, chopped green onions, and/or black olives. Serve with tortilla chips.
