1?? One standout lecture was on Kit Windows-Yule and Robert Farr for their work on simulations of Coffee Beans in the air fluidized roaster for improved flavour and consistentency in the roast using CFD-DEM models.

"The Molecular Dynamic Simulations of Triacidglycerides in Cocoa Butter and their behaviour during cocoa melting" by Robert Cordina .This topic, largely unexplored in the cocoa industry, offers groundbreaking insights. Understanding these simulations could revolutionize our grasp of mouthfeel during oral processing experiments, providing invaluable knowledge for the cocoa industry.
3?? Another eye-opening talk by Dimitrios Bikos about how tiny air bubbles (micro aeration) affect the way chocolate heats up (Impact on thernmal properties) . Using Multiscale heat transfer models, they showed us how this helps us understand why chocolate melts the way it does when we chew it.
4?? Robert Farr work is like a virtual coffee nose! He uses fancy simulations to understand the aroma dynamics of roasted and ground coffee during their fill in packaging. This helps us to simulate handle and transport of roast and ground coffee to get that perfect brew of aroma every time.
Vishal Sharma emphasis on how Ansys can provide the comprehensive toolkits to simulate various processes within food systems. This helps uncover hidden dynamics of food systems, optimizing process efficiency and capacity while boosting product quality.
