Food Service is at a Historic All-Time High, with Lamb Increasing in Retail & Recipe Popularity in the United States.
Did you know that Americans spend more at restaurants than grocery stores for the first time in history? In the month of January, Americans spent $86.6 billion dining out - a 24.2% increase compared to 2022.
As a result of Millennials and Gen Z'ers, the "foodie generations", dominating the buying power, the landscape of retail and menu offerings has been changing in the United States. With so many Americans dining out and exploring restaurant menus, food ingredients that were not traditionally the norm in this country have rapidly grown in popularity.
Lamb consumption and consumer interest in lamb have been on the rise.
Amid these changes, one of the proteins that have seen an increase in popularity and steady sales gains has been Lamb. Lamb exports to the United States from Australia grew by 13% in 2021, despite logistics and labor challenges impacting the supply chain. Between the second quarter of 2021 and the second quarter of 2022, dollar sales of lamb increased by 15.7%, and volume sales increased by 9.3%. Lamb and exotics were the only meat categories to grow volume in 2021 compared to 2020. Compared to 2019 pre-Covid, lamb sales were up 19.3% in 2021.
With its lower cost and wide availability, Australian Lamb is poised to drive continued lamb growth in the United States.
Price and availability have been indicated throughout multiple surveys as potential challenges for consumers purchasing lamb. These studies also indicated that education on preparing lamb and increasing its availability in retail stores could increase lamb consumption in the United States. One of the primary barriers is being unable to find lamb in grocery stores, yet these dishes do quite well on restaurant menus.
Australian Lamb is globally recognized for its availability, consistency, meticulous grading standards, exceptional shelf life, tender “beef-like” texture, and delicious mild flavor. With drought affecting sheep farmers in the United States, lamb exports have increased, with the nation turning to Australia as the most trusted importer of sheepmeat.
