Chef Patrick's journey to delivering natural flavors continues with another earthy herbs from the Garden, pangium, or known widely as kluwek.
This time, Chef Patrick Ramon has line up three exquisite dishes, exhibiting the delicate and unique flavors of pangium, seeping to every bite. The journey starts with Homemade Cured Salmon, the freshly made salmon mozaic over green oil and lemon butter emulsion, balsamic pangium glaze, topped with tobiko and cream cheese. The delicious journey does not stop there, Chef Patrick has curated his own style of Tongseng Kambing, slow-cooked lamb shank on pangium-infused curry broth, with fragrant rice and his signature sambal terasi. The unique touch of this Garden to Table series lies on the combination of local delicacies with global-class comfort food on the thick broth of Rawon incorporated with ramen noodles, Rawon Noodles.
